method
Mini Pizza Tacos
- Get your pizza oven nice and hot.
- Divide the 250g dough ball into 3 equal sized balls.
- Roll out 3 pizza bases about 7” in diameter using a rolling pin.
- Spread a thin layer of tomato sauce over the mini base, leaving a small border around the edges.
- Sprinkle with taco seasoning.
- Spread your taco fillings over.
- Sprinkle grated mozzarella cheese and cheddar cheese over - the cheese will melt and hold all the toppings together.
- Carefully transfer the mini pizzas to your peel - remember to dust the peel with some flour or semolina to stop the dough from sticking.
- Bake in the pizza oven for about 2 minutes.
- Once the pizzas are out of the oven, fold each in half and pop in a taco holder.
- Garnish with sliced lettuce, slices of avocado or gaucamole, then a drizzle of sour cream and hot sauce.
